Chicken and Red Bean Pasta Salad

Pasta is one of those versatile ingredients, and I make many meals with recipes I formulate myself, classic recipes or a spin on the classic recipes.

A pasta dish that I love and will continue to remake is Chicken and Red Bean Pasta Salad. It is super easy to make, delicious, filling and has ingredients like red beans, chicken and lettuce, which makes it nutritious. It is also very customizable, so you can add, substitute or remove ingredients.

Chicken and Red Bean Pasta Salad

This hearty and nutritious Chicken and Red Bean Pasta Salad is packed with flavour and perfect for a quick meal or meal prep. It is filling, easy to prepare and customizable.

Equipment

  • 2 Pots you might use just one pot, depending on whether you want to boil your chicken and pasta simultaneously or at separate times.
  • A Mixing Bowl
  • A Sieve
  • A Knife
  • A Chopping Board
  • A Mixing Spoon
  • A Can Opener
  • A Scooping Spoon

Ingredients

  • 1 cup boiled pasta any type you prefer
  • 1 cup cooked seasoned chicken (boiled or fried, diced)
  • 1/2 cup red beans canned or cooked
  • 1-2 cups lettuce chopped or sliced
  • 1/4 cup mayonnaise or more to taste
  • 1 tsp lemon juice optional

Instructions

  • Prepare the chicken: If you haven’t already, cook and season your chicken. You can either boil or fry it, then strip the bone if you are using any other part of the chicken aside from the breast, and dice it into bite-sized pieces.
  • Prepare the pasta: Boil the pasta and drain it, setting it aside to cool.
  • Combine ingredients: In a mixing bowl, add the boiled pasta, diced chicken, red beans, and chopped lettuce.
  • Add the mayo: Stir in the mayonnaise, mixing everything together until well combined.
  • Optional add-ins: If desired, add lemon juice, leafy greens like spinach or kale, or season with extra herbs for added flavor.
  • Serve: Serve immediately or refrigerate for later. Enjoy!

Notes

Mayonnaise can be swapped with greek yogurt or a lighter version for fewer calories.
