Coleslaw Pasta Salad
As a college student, I’m always on the lookout for simple, versatile ingredients that can work in a variety of recipes, which is one of the reasons I love pasta. Pasta is one of my go-to staples because it’s budget-friendly, filling, and easy to transform into many delicious recipes. I also love meals that come together quickly.
That’s why this Coleslaw Pasta Salad is one of my favourites!
It’s the perfect balance of delicious and easy. It is ready in about 20 minutes and packed with vibrant vegetables like carrots and cabbage, adding a pop of colour and extra flavour and nutrients. Pre-made coleslaw mix also makes it super easy and quick to make.
This pasta recipe is a perfect and nutritious college meal.


Coleslaw Pasta Salad
Equipment
- A Pot
- A Sieve
- A Mixing Bowl
- A Chopping Board (optional)
- A Knife (optional)
- A Spoon or Whisk
Ingredients
- 2 Cups Rotini You can use other types of pasta like ditalini, fusili or macaroni
- 2 Cups Coleslaw Mix Or your finely sliced cabbage and carrot, if you are not using pre-made coleslaw mix.
- 1 1/2 Cups Mayonnaise
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 tsp Lemon Juice
- 1 Cucumber optional, sliced
- Leafy Greens optional
Instructions
- Cook pasta according to the package instructions, drain and rinse in cold water.
- Prepare the base: If using a pre-made coleslaw mix, skip this step. If not, finely slice cabbage and carrots.
- Combine pasta and coleslaw: In a mixing bowl, combine your boiled pasta and coleslaw mix. Add optional cucumbers and leafy greens.
- Add mayonnaise: Stir in the mayonnaise until well coated.
- Season: Add salt and pepper to taste (optional).
- Add Lemon Juice to the mixture and stir.
- Serve: Serve immediately or chill in the fridge for a bit if preferred, and enjoy!
