Coleslaw Pasta Salad

This easy and customizable Coleslaw Pasta Salad is perfect for a light meal or side dish. With a creamy mayonnaise base, fresh cabbage and carrots, and a variety of optional add-ins, it’s a simple recipe that can be enjoyed anytime.

Ingredients

  • 2 Cups Rotini You can use other types of pasta like ditalini, fusili or macaroni
  • 2 Cups Coleslaw Mix Or your finely sliced cabbage and carrot, if you are not using pre-made coleslaw mix.
  • 1 1/2 Cups Mayonnaise
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 tsp Lemon Juice
  • 1 Cucumber optional, sliced
  • Leafy Greens optional

Instructions

  • Cook pasta according to the package instructions, drain and rinse in cold water.
  • Prepare the base: If using a pre-made coleslaw mix, skip this step. If not, finely slice cabbage and carrots.
  • Combine pasta and coleslaw: In a mixing bowl, combine your boiled pasta and coleslaw mix. Add optional cucumbers and leafy greens.
  • Add mayonnaise: Stir in the mayonnaise until well coated.
  • Season: Add salt and pepper to taste (optional).
  • Add Lemon Juice to the mixture and stir.
  • Serve: Serve immediately or chill in the fridge for a bit if preferred, and enjoy!

Notes

Cabbage and Carrots: High in fiber and vitamins A and C, promoting good digestion and boosting immunity.
Mayonnaise: Adds a creamy texture, but can be swapped with a lighter option for fewer calories.
You can customize the recipe to include other ingredients of your choice or decrease or increase the quantity of the ingredients.
