Potato Mac Salad
This potato mac salad recipe was born out of pure inspiration. It was only months later I found out that there was a similar recipe out there. As a college student, I always seek ways to save money and minimize expenses. One way I do that is by maximizing the ingredients I already have in my kitchen before deciding to buy more.
On this particular day, I looked at what I had—potatoes, macaroni, eggs, tomatoes, and some leafy greens. I thought, “What if I put all these together?” And just like that, this potato mac salad was born and turned out to be delicious.
What I love most about the potato mac salad is how filling and satisfying it is. The tender potatoes, the chewy macaroni, and the freshness of the veggies all come together perfectly. It’s quick, easy, and perfect for a nutritious and affordable meal.


Potato Macaroni Salad
Ingredients
- Potatoes enough to boil and slice
- Macaroni Pasta or choose your preferred pasta
- Mayonnaise
- Eggs boiled and diced
- Tomatoes sliced
- Leafy greens e.g., cabbage, spinach
- Salt to cook your pasta and potato
- Chili pepper to garnish optional
Instructions
- Boil Potatoes and Pasta: Boil the potatoes until soft but not mushy. Slice them or cut them into chunks once they're cooked. Boil your pasta and drain it once cooked. Let them cool. You can boil them together or separate.
- Boil your eggs, dice them
- Mix Potatoes and Pasta: In a large bowl, add the potatoes and cooked pasta.
- Add Mayo and Eggs: Mix in mayonnaise until the desired creaminess is achieved, and add the diced eggs to the mixture.
- Add Fresh Vegetables: Slice or dice tomatoes and add them to the bowl. Add leafy greens (cabbage, spinach, or other choices)
- Garnish: Garnish with chili pepper or any other seasoning you prefer.
- Refrigerate, serve cold and enjoy. Refrigeration is optional, you can serve at room temperature.
