This creamy potato macaroni salad is perfect for any occasion. It combines the goodness of tender potatoes, macaroni, eggs and vegetables, all wrapped in a creamy mayo dressing!
Boil Potatoes and Pasta: Boil the potatoes until soft but not mushy. Slice them or cut them into chunks once they're cooked. Boil your pasta and drain it once cooked. Let them cool. You can boil them together or separate.
Boil your eggs, dice them
Mix Potatoes and Pasta: In a large bowl, add the potatoes and cooked pasta.
Add Mayo and Eggs: Mix in mayonnaise until the desired creaminess is achieved, and add the diced eggs to the mixture.
Add Fresh Vegetables: Slice or dice tomatoes and add them to the bowl. Add leafy greens (cabbage, spinach, or other choices)
Garnish: Garnish with chili pepper or any other seasoning you prefer.
